Ingredients: 
  • 300g flour
  • 1 Cup of Oats + Chia Coconut (I used The Chia Co. but rolled oats also work well).
  • 1 Cup currants
  • 200ml skim milk
  • 1 medium egg
  • 2 tbsp of natural honey
  • 1 ½ tsp mixed spice
  • 1 sachet yeast (7g)
  • 2 heaped scoops Musashi Natural Protein Power (unflavoured)
  • 40g Butter
Method: 
  1. Combine flour, yeast, mixed spice and protein powder in a large bowl.
  2. Melt butter over a low heat then add milk and honey until lukewarm.
  3. Making a little well in the dry mixture, pour the milk mixture into the dry mixture and stir for a few minutes until a soft dough is formed.
  4. Turn dough into a floured surface. Kneed for approximately 10-minutes. Using spray oil, lightly oil a large bowl and place dough into the bowl and cover with plastic wrap. Set aside for 1-1.5 hours. Until dough has doubled in size.
  5. Line a baking tray with non-stick paper. Knead the dough for a couple of minutes on a lightly floured surface. Divide into 12 even portions, shape each portion into a small ball. Place balls onto lined tray about 1cm apart. Cover with plastic wrap and leave to sit for a further 30-minutes. Preheat the oven to 180c.
  6. Place in oven for 20-25 minutes or until a skewer comes out clean.
  7. To make the cross either melt a small serve of white chocolate or if you would like to make them super healthy mix ½ scoop of vanilla protein powder with a dash of water to make a thick paste. Using a teaspoon make a cross over the bun and it is ready to serve.
