Ingredients: 

Selection of vegetables of your choice (e.g. capsicum, green beans, broccoli, carrots, mushrooms, baby corn and asparagus)

Carton of egg whites or 8 egg whites

1 tablespoon of olive oil

100ml milk

Method: 

Preheat the oven to 200c. Lightly stir fry your vegetables will a small amount of olive oil. Line the baking dish with grease proof paper and place your vegetables into the dish, whisk the egg whites and milk together and place in the oven until golden brown or the skewer comes out clean. Leave to sit for 10min and serve alongside a green salad.
