Stuffed Capsicums (lentil mixture)

Ingredients: 

1 cup of green or brown lentils

¼ red onion chopped

1 garlic clove crushed

1 teaspoon of vegemite

Fresh herbs copped finely

2tablespoons of frozen sweetcorn

2table spoons of frozen peas

2 Button mushrooms chopped finely

Method: 

Makes: 1. Cook red capsicum as above. 1 cup of lentils with 2cups of water, add chopped ingredients to the lentils and bring to the boil on the stove. Keep boiling until all of the water has evaporated and remove from heat. Stir and leave to sit for 10min. Fill the cooked capsicum with the lentil mixture, grate low fat cheese over the top and wrap in foil. Place in the oven for 15-10min at a medium heat.
