Skinless chicken breast 100g
Tinned tomato (chopped or diced) 125g
Onion 4 slices (diced)
1 clove garlic (crushed)
Red chili raw (diced)
¼ cup of water
Serve alongside vegetables and sweet potatoes or rice.
Finely chop and dice onion, chill and garlic and place in a shallow pan (frying pan) add the water and allow the ingredients to lightly simmer. Add the chicken breast and cook lightly on both sides for 5 minutes. Add the tinned tomatoes to the pan and cover with a lid for a further 15min on a low heat. Turn chicken breast occasionally to encourage even cooking. In the meantime lightly steam asparagus, green beans and carrots (or vegetables of your choice) and serve together.
