Ingredients: 

1 cup quinoa

Olive oil

½ cup Celery

½ cup Red capsicum

Handful of spinach (raw)

Tuna in brine, drained (small tin)

1 tablespoon of low fat mayonnaise

Method: 

Cook Quinoa as directed on pack. Finally chop celery and capsicum. Mix tuna, mayonnaise, celery, spinach and capsicum together and place on a bed of Quinoa to serve.
