Ingredients: 

5 eggs whisked in a bowl

Cup of spelt or wholemeal flour

1 medium zucchini grated

1 medium carrot grated

One large spring onion sliced thinly

200g of low fat cottage cheese

Teaspoon of olive oil

Method: 

This recipe in nice served either hot or cold. 

Pre-heat oven 200c. Whisk eggs in a large bowl. Add grated zucchini, spring onion and carrot. Add flour, cottage cheese and teaspoon of olive oil. Mix the ingredients together. Place in a muffin tray and place into the oven for 30min or until brown on top and the skewer comes out clean. 

Top tip: Prepare the night before and store in the fridge. It makes a great filling lunch with salad or on its own.
